'''''Sinampalukan''''', also known as '''''sinampalukang manók''''' or '''tamarind chicken''', is a Filipino chicken soup consisting of chicken cooked in a sour broth with tamarind, tamarind leaves, ginger, onion, garlic, and other vegetables.

==Name== The term ''sinampalukan'' literally means "[cooked] with tamarind", from Tagalog ''sampalok'', "tamarind".<ref>{{cite web |title=Sampalok |url=https://www.tagaloglang.com/sampalok/ |website=Tagalog Lang |access-date=April 13, 2019}}</ref>

==Description== ''Sinampalukan'' is prepared by first sautéing the chicken with garlic, ginger, and onions. Water is then added with tamarind pulp, young tamarind leaves and usually ''siling haba'' or ''labuyo'' chilis and tomatoes. Other vegetables can also be added if desired, including green beans, pechay, cabbage, eggplant, and others. It is served over white rice.<ref name="kp">{{cite web |first1=Lalaine|last1=Manalo|title=Sinampalukang Manok |url=https://www.kawalingpinoy.com/sinampalukang-manok/ |website=Kawaling Pinoy |access-date=April 13, 2019}}</ref><ref name="pp">{{cite web |title=Sinampalukang Manok Recipe |url=https://panlasangpinoy.com/sinampalukang-manok/ |website=Panlasang Pinoy |access-date=April 13, 2019}}</ref><ref name="swr"/><ref>{{cite web |last1=Angeles |first1=Mira |title=Sinampalukang Manok Recipe |url=https://www.yummy.ph/recipe/sinampalukang-manok-soup-recipe |website=Yummy.ph |access-date=April 13, 2019}}</ref><ref>{{cite web |title=Sinampalukang Manok |url=http://filipinostylerecipe.com/tag/sinampalukan/ |website=Filipino Style Recipe |access-date=April 13, 2019}}</ref> ''Sinampalukan'' is regarded as a comfort food, usually served to sick people or during cold days.<ref name="pp"/><ref name="swr">{{cite web |title=Sinampalukan: Filipino Chicken Soup |url=http://serve-with-rice.com/sinampalukan-filipino-chicken-soup/ |website=Serve With Rice |access-date=April 13, 2019 |archive-date=April 13, 2019 |archive-url=https://web.archive.org/web/20190413083359/http://serve-with-rice.com/sinampalukan-filipino-chicken-soup/ |url-status=dead }}</ref>

''Sinampalukan'' is very similar to ''sinigang'' and is sometimes regarded as a mere variant of the latter. However, ''sinampalukan'' differs most obviously in that it uses tamarind leaves as one of the main ingredients. It is also restricted to tamarind as the souring agent, unlike ''sinigang'' which can also use a variety of other sour fruits.<ref name="kp"/><ref>{{cite web |title=Sinampalukan Manok (Tamarind'd Chicken) |url=http://80breakfasts.com/sinampalukan-manok-tamarindd-chicken/ |website=80 Breakfasts |access-date=April 13, 2019}}</ref> ==External links== * {{commonscat-inline|Sinampalukang manok}} ==See also== *Linarang
