Originally a producer based in Scarborough, Ontario, it currently exists as a brand whose products are imported and sold in Canada by U.S.-based TreeHouse Foods.

Bick's emerged in 1951 in the Toronto area when local farmers George and Lena Bick and their sons Walter and Thomas began to pickle the cucumbers produced on their Knollview farm.<ref name="practicallyedible1">{{cite web |url=http://www.practicallyedible.com/edible.nsf/pages/bickspickles |title=Bick's |publisher=Practicallyedible.com |date= |accessdate=2010-11-29 |archiveurl= https://web.archive.org/web/20101028155335/http://www.practicallyedible.com/edible.nsf/pages/bickspickles| archivedate=2010-10-28}}</ref><ref>{{cite web |url=http://www.bicks.ca/all-about-bicks.aspx |title=All About Bick's |publisher=Bick's |accessdate=2017-03-21 |archive-url=https://web.archive.org/web/20110412134214/http://www.bicks.ca/all-about-bicks.aspx |archive-date=April 12, 2011 |url-status=dead }}</ref> Beginning as a small operation of 60,000 jars, the Bicks produced 12 million jars in 1960.<ref name="practicallyedible1"/> The business was sold in 1966 to Kraft Foods Canada and later became part of International Multifoods.<ref>{{cite book |url=http://www.triviaguys.com/Iknowexam.htm |title=I Know That Name!: The People Behind Canada's Best Known Brand Names from Elizabeth Arden to Walter Zeller |last1=Kearney |first1=Mark |last2=Ray |first2=Randy |publisher=Dundurn |year=2002 |isbn=1550024078 |archiveurl=https://web.archive.org/web/20160303202301/http://www.triviaguys.com/Iknowexam.htm |archivedate=March 3, 2016 |url-status=dead |df=mdy-all }}</ref>

Walter Bick, one of the founders of Bick's Pickle, died on October 17, 2011, at the age of 94. Walter left behind four children, thirteen grandchildren and seven great-grandchildren.<ref>{{Cite web|url=http://www.legacy.com/obituaries/thestar/obituary.aspx?n=walter-and-jeanny-bick&pid=154197144|title=Walter and Jeanny Bick's Obituary on Toronto Star|website=Toronto Star|access-date=2018-01-30}}</ref>

For 50 years, the plant was a large commercial operation in the Scarborough City Centre area. However, the pickling and brining operations moved to Delhi, Ontario, in 1998 and remaining production to Dunnville, Ontario, in 2001.{{citation needed|date=July 2021}}

In 2004, The J.M. Smucker Company acquired Bick's after it merged with International Multifoods. In 2010, Smuckers announced the closure of both Ontario facilities and thus brought an end to Bick's production in Canada.<ref>{{cite news |url=http://www.thespec.com/news-story/2121557-bick-s-closure-next-month-will-devastate-dunnville-employees/ |title=Bick's closure next month will "devastate" Dunnville: employees |work=The Hamilton Spectator |date=2011-10-16 |accessdate=2017-03-21}}</ref> Since 2011, Bick's products are imported from the United States and marketed by the company's Markham, Ontario, based head office.<ref>{{cite news |url=http://cornwallfreenews.com/2010/11/another-canadian-food-icon-lost-eating-canadian-by-reg-coffey-november-6-2010-cornwall-ontario/ |title=Another Canadian Food Icon Lost |last=Coffey |first=Reg |work=Cornwall Free News |date=2010-11-06 |accessdate=2017-03-21}}</ref>
