'''Toriten''' is a Japanese [tempura](/source/tempura) style [fried chicken](/source/fried_chicken). It originated food in [Ōita Prefecture](/source/%C5%8Cita_Prefecture), and is very popular there.
Any part of the [chicken](/source/chicken) can be used. The meat is cut into small pieces, dipped in [soy sauce](/source/soy_sauce), [sake](/source/sake) and [garlic powder](/source/garlic_powder), rolled in tempura powder and deep fried. Toriten is commonly served with fresh greens, and eaten hot immediately after frying.  The most common sauce is [Ponzu](/source/Ponzu) sauce (made with soy sauce and vinegar) with [mustard](/source/Mustard_(condiment)).
In Oita, it is also popular to eat with a [Kabosu](/source/Kabosu)-based sauce.
