**Trit**, also known as **tirit**, is a [Turkish dish](/source/Turkish_cuisine) prepared by soaking broken-up [stale bread](/source/Staling) in a broth prepared from [offal](/source/Offal), and then seasoned with ground [pepper](/source/Black_pepper) and [onion](/source/Onion). Some variants add cheese or [yogurt](/source/Yogurt).[1]

Tirit

Tirit is based on [cooking techniques](/source/List_of_cooking_techniques) from Central Asia, where similar dishes were prepared using [lamb](/source/Lamb_and_mutton) and [leftovers](/source/Leftovers) of various kinds, often including stale bread; see [kuurdak](/source/Kuurdak).

Tirit is sometimes found in the [cuisine of Mecca](/source/Saudi_Arabian_cuisine), where the story is told that the morale of a community hungry from famine brought about by a [drought](/source/Drought) was boosted by being sustained by this dish until the return of times of greater plenty.

[Khash](/source/Khash_(dish)) is a similar offal-based dish eaten in many countries in [Eastern Europe](/source/Eastern_European_cuisine), [Western Asia](/source/Middle_Eastern_cuisine), and the southern [Caucasus](/source/Caucasian_cuisine).[2]

Similar combinations of offal and grain are found in [haggis](/source/Haggis) and some kinds of [white pudding](/source/White_pudding), which use [oatmeal](/source/Oatmeal) as the starch.

The forms of tirit involving cheese are similar to the [barley](/source/Barley)-based [Tibetan](/source/Tibet) staple [tsampa](/source/Tsampa).
