**Roujiamo** or **rougamo** ([simplified Chinese](/source/Simplified_Chinese_characters): 肉夹馍; [traditional Chinese](/source/Traditional_Chinese_characters): [肉夾饃](https://en.wiktionary.org/wiki/%E8%82%89%E5%A4%BE%E9%A5%83); [pinyin](/source/Pinyin): *ròujiāmó/ròugāmó*; lit. 'meat sandwich')[1] is a [Shaanxi](/source/Shaanxi_cuisine) [street food](/source/Street_food).[2]

## Overview

The meat is most commonly [pork](/source/Pork), stewed for hours in a soup with spices and seasonings.

Some alternatives are also available. For example, in Muslim areas in [Xi'an](/source/Xi'an), the meat is usually [beef](/source/Beef) (seasoned with [cumin](/source/Cumin) and pepper), and in [Gansu Province](/source/Gansu) it is often [lamb](/source/Lamb_and_mutton). The meat is then minced or chopped and stuffed in *baijimo* ([simplified Chinese](/source/Simplified_Chinese_characters): 白吉馍; [traditional Chinese](/source/Traditional_Chinese_characters): [白吉饃](https://en.wiktionary.org/wiki/%E7%99%BD%E5%90%89%E9%A5%83); [pinyin](/source/Pinyin): *báijímó*), a type of [flatbread](/source/Flatbread). An authentic baijimo is made from a wheat flour dough with yeast and then baked in a clay oven, but now in many parts of China, baijimo is made in a frying pan,[2] giving a taste that diverges significantly from the clay oven-baked version. Depending on the types of spices used to cook the meat and the way the bread is made, the taste of roujiamo can vary greatly from vendor to vendor. In Shaanxi, roujiamo is often sold in the form of combo with [liangpi](/source/Liangpi) and [Ice Peak](/source/Ice_Peak_(soft_drink)) soft drink. It is found with regional modifications across China.

Roujiamo is considered the Chinese equivalent to the Western [hamburger](/source/Hamburger) and meat [sandwiches](/source/Sandwich).[3][4] Roujiamo is considered to be one of the world's oldest types of hamburgers, since the bread or the "mo" dates back to the [Qin dynasty](/source/Qin_dynasty) (221–206 BC) and the meat to the [Zhou dynasty](/source/Zhou_dynasty) (1045–256 BC).[4][5][*[unreliable source?](https://en.wikipedia.org/wiki/Wikipedia:Reliable_sources)*]
