'''Primost''', messmör, or '''prime cheese''' is a Swedish [cheese](/source/cheese) made from cow's milk. It is slightly brown and has a soft spreadable texture. Cream is added towards the end of the process. The semi-sweet taste is derived from [caramelizing](/source/Caramelization) the milk sugars of the [whey](/source/whey) as it is made. <ref>{{cite web|url= http://www.motherearthnews.com/real-food/homemade-cheese/mysost-leftover-whey-zm0z15fmzkin |title= Mysost: A Whey Better Cheese Recipe|publisher = Mother Earth News |accessdate= February 1, 2017 }}</ref><ref>{{cite web|url= https://snl.no/mysost |title =mysost|website= Store norske leksikon |access-date=March 1, 2020}}</ref>

Primost is made in the same way as [brunost](/source/brunost), but the whey mixture is not cooked as long. These caramelized cheeses are often served with dark bread or Norwegian flatbread, as a dessert cheese, or as a cheese melted into a variety of culinary dishes.<ref>{{cite web|url= http://blog.cheesemaking.com/prim-ost-anyone/ |title= Whey Cheeses – Primost, Mysost, Gjetost|publisher = cheesemaking.com |author= Jeri Case |date= February 23, 2010|accessdate= February 1, 2017 }}</ref><ref>{{cite web|url= https://www.snl.no/brunost|title =brunost|website= Store norske leksikon
