'''''Jagdwurst''''' (literally ''hunting sausage'') is a German cooked [sausage](/source/sausage) made with finely ground pork sausage meat and coarse chunks of lean pork or pork belly. Some recipes also include beef. The meat is usually seasoned with salt and flavoured with spices such as [green peppercorn](/source/green_peppercorn)s, [mace](/source/Mace_(spice)), [ginger](/source/ginger) and [coriander](/source/coriander). [North German](/source/North_German) styles of ''Jagdwurst'' often contain mustard seeds, and in the [south](/source/Southern_Germany), pistachio pieces are a common ingredient.

''Jagdwurst'' can be eaten cold, for example in sandwiches, or hot, sometimes cut into soup and other hot dishes.

In [eastern Germany](/source/eastern_Germany), fried, sliced ''Jagdwurst'', often coated in breadcrumbs, is termed {{lang|de|[Jägerschnitzel](/source/J%C3%A4gerschnitzel)}}.<ref>{{cite web |title=Jägerschnitzel – Streit im Netz um ein Stückchen Fleisch |url=https://www.nordkurier.de/kochen-backen/jaegerschnitzel-streit-im-netz-um-ein-stueckchen-fleisch-2340808609.html |website=Nordkurier |access-date=4 December 2020 |language=DE |date=23 September 2020}}</ref><ref>{{cite web |last1=Radvan |first1=Manuela |title=Jägerschnitzel-Zoff: Über das berühmteste Ost-West-Missverständnis |url=https://www.berliner-kurier.de/stil-individualitaet/der-grosse-jaegerschnitzel-zoff-li.107978 |website=[Berliner Kurier](/source/Berliner_Kurier) |access-date=4 December 2020 |language=DE |date=28 September 2020}}</ref> The dish is essentially a lower-budget schnitzel conceived in harder times and popular in the [German Democratic Republic](/source/East_Germany), using sausage instead of lean meat due to its lower price and higher availability. The more traditional, common preparation of jägerschnitzel comprises an [escalope](/source/escalope) of lean pork or veal served with a mushroom sauce, also known as {{lang|de|Schnitzel nach Jäger Art}} ('huntsman-style schnitzel').
