'''Hogao''' is a variant of Spanish [sofrito](/source/sofrito) and is typically used in [Colombian cuisine](/source/Colombian_cuisine). It is traditionally made with only [long green onions](/source/scallion) and [tomato](/source/tomato)es, differing from guiso, which can also be made with [round onions](/source/white_onion), [garlic](/source/garlic), [cumin](/source/cumin), [salt](/source/salt), and [pepper](/source/Black_pepper) that are sauteed over low heat during the cooking process. It is used for meats, [arepas](/source/arepas), rice, and other dishes, and can complement the famous ''[bandeja paisa](/source/bandeja_paisa)''.<ref name="Wells2007">{{cite book|author=Troth Wells|title=The World of Street Food: Easy Quick Meals to Cook at Home|url=https://books.google.com/books?id=Ouz-AwAAQBAJ&pg=PA107|date=15 March 2007|publisher=New Internationalist|isbn=978-1-904456-50-6|pages=107}}</ref> The ingredients and naming tradition varies from region to region, though it is originally from [Antioquia](/source/Antioquia_Department) and the region whose people are known as paisa. Its name comes from the old use of the verbs ''ahogar'' and ''rehogar'' that reference a [slow cooking](/source/slow_cooking) technique.

[Goya Foods](/source/Goya_Foods) sells [bottled](/source/canning) hogao commercially in the United States.
