The '''cubanelle''', also known as the "Cuban pepper" (''ají cubanela''), is a varietal of mild [sweet pepper](/source/Bell_pepper) from the species ''[Capsicum annuum](/source/Capsicum_annuum)''.<ref name=pepperscale>{{Cite news|url=http://www.pepperscale.com/cubanelle-pepper/|title=Cubanelle Pepper: Simmering Sweet - PepperScale|date=2014-11-02|newspaper=PepperScale|language=en-US|access-date=2016-10-25}}</ref> When unripe, it is a light, yellowish-green color, but will turn bright red if allowed to ripen. Compared to [bell peppers](/source/Bell_pepper), it has thinner flesh, is more elongated, and has a slightly more "wrinkled" appearance.

It is used extensively in [criollo cooking](/source/Criollo_people) and the [cuisines of Cuba](/source/Cuban_cuisine), [the Dominican Republic](/source/Dominican_Republic_cuisine) and [Puerto Rico](/source/Puerto_Rican_cuisine). In [Puerto Rican](/source/Puerto_Rico) recipes, ''ají cubanela'' is one of the primary ingredients of [sofrito](/source/sofrito), a mild [salsa](/source/Salsa_(food))- or ''[pico de gallo](/source/pico_de_gallo)''-like vegetable-herb blend that forms the basis of many savory dishes, usually made up of cubanelle and bell peppers, onions, garlic, cilantro, olive oil and salt and pepper, with [Sazón](/source/Goya_Foods) or other savory seasonings added.<ref>{{cite book |url=https://books.google.com/books?id=c3cqDwAAQBAJ&pg=PA294 |page=294 |title=Peppers of the Americas: The Remarkable Capsicums That Forever Changed Flavor |first=Maricel E. |last=Presilla |publisher=Clarkson Potter/Ten Speed |year=2017 |isbn=9780399578922}}</ref>

Most cubanelle pepper imports come from the [Dominican Republic](/source/Dominican_Republic), the main exporter of the cultivar.
