Knapp won the State Championship in 2005 with McQuaid Jesuit High School, which he attended for his freshman and sophomore year. He played four seasons with the [Miami RedHawks men's ice hockey](/source/Miami_RedHawks_men's_ice_hockey) team of the [Central Collegiate Hockey Association](/source/Central_Collegiate_Hockey_Association) (CCHA).

On April 3, 2012, Knapp signed a two-year entry-level contract with the [Buffalo Sabres](/source/Buffalo_Sabres) of the [National Hockey League](/source/National_Hockey_League) (NHL)<ref>{{cite web| url = http://sabres.nhl.com/club/news.htm?id=625679 | title = Sabres sign Knapp to entry-level deal | publisher = [Buffalo Sabres](/source/Buffalo_Sabres) | date = 2012-04-03 | accessdate = 2012-04-03}}</ref> and was assigned to their AHL affiliate, the [Rochester Americans](/source/Rochester_Americans).

On April 12, 2014, Knapp made his NHL debut when he entered the [Buffalo Sabres](/source/Buffalo_Sabres)' net, in relief of the injured [Matt Hackett](/source/Matt_Hackett), with 11:35 remaining in a 4–1 loss to the [Boston Bruins](/source/Boston_Bruins).
