'''Clonmore''' is a hard [cheese](/source/cheese) made from [goat](/source/goat)'s milk, with a waxed rind. It originates from [Charleville](/source/Charleville%2C_County_Cork), [County Cork](/source/County_Cork) in [Ireland](/source/Republic_of_Ireland)<ref>{{Cite web |url=http://www.bordbia.ie/aboutfood/farmhouseCheese/FarmhouseCheesesGuides/FarmhouseCheeseBooklet.pdf |title=The Irish Farmhouse Cheeses Guide |access-date=2011-04-06 |archive-url=https://web.archive.org/web/20110927083930/http://www.bordbia.ie/aboutfood/farmhouseCheese/FarmhouseCheesesGuides/FarmhouseCheeseBooklet.pdf |archive-date=2011-09-27 |url-status=dead }}</ref> and is produced by Tom and Lena Biggane on their farm outside Newtownshandrum since 2001.

It is a gouda style cheese made with vegetarian [rennet](/source/rennet), covered in a beige waxed rind. Both pasteurised and non-pasteurised ([raw milk](/source/raw_milk)) versions are available. It has a mild and sweet flavour, which is stronger when aged. It is a seasonal cheese, produced from late March till early November. The goats herd numbers between 70 and 80 of both [Saanen](/source/Saanen_goat) and [Toggenburg](/source/Toggenburg_(goat)) breeds, and are free range.
