'''Crème chiboust''' is a [crème pâtissière](/source/cr%C3%A8me_p%C3%A2tissi%C3%A8re) (pastry cream) lightened with [meringue](/source/meringue), though [whipped cream](/source/whipped_cream) is sometimes substituted for the meringue. It is the filling for the [gâteau St-Honoré](/source/g%C3%A2teau_St-Honor%C3%A9), supposedly created and developed in 1847 by the pastry chef M.
