'''Boiled beef''' is a historic English dish<ref>{{cite book|last=Spencer|first=Colin|title=British Food: An Extraordinary Thousand Years of History|year=2002|publisher=[Columbia University Press](/source/Columbia_University_Press)|location=New York|isbn=9780231131100}}</ref> eaten by working-class people within England in [Victorian](/source/Victorian_era) [England](/source/England) and today; it was also popular in the early 19th century in the US. Its popularity has decreased in recent years. Traditionally, cheaper cuts of meat were used; boiling makes the meat more [tender](/source/meat_tenderness) than roasting.<ref name=thring>{{cite news|last1=Thring|first1=Oliver|title=Consider boiled meat|url=https://www.theguardian.com/lifeandstyle/wordofmouth/2010/jun/21/consider-boiled-meat|access-date=2 December 2014|work=[The Guardian](/source/The_Guardian)|date=21 June 2010|location=[London](/source/London), United Kingdom}}</ref> It was usually cooked with onions and served with carrots and boiled potatoes. It was not uncommon for the beef to be salted in a [brine](/source/brine) for a few days, then soaked overnight to remove excess salt before it was boiled. In other parts of England, cabbage replaced carrots.

This dish gave rise to the old Cockney song “[Boiled Beef and Carrots](/source/Boiled_Beef_and_Carrots)” which used to be sung in some East London pubs when they had a pianist and singsong night.

Boiled beef is also a traditional [Jewish](/source/Jewish_cuisine) dish served in many homes and Jewish [deli](/source/Delicatessen)s. It is usually [flank steak](/source/flank_steak) boiled and served with vegetables, [broth](/source/broth), and sometimes [matzo ball](/source/matzo_ball)s, often mislabelled as [corned beef](/source/corned_beef).
