It is made of small cubes of [agar](/source/agar) jelly, a white translucent jelly made from [red alga](/source/red_alga)e.<ref name="japan-talk"/> The agar is dissolved with [water](/source/water) (or [fruit juice](/source/fruit_juice) such as [apple juice](/source/apple_juice)) to make the jelly. It is served in a bowl with sweet [azuki bean](/source/azuki_bean) paste or ''[anko](/source/Red_bean_paste)'' (the ''an'' part of ''anmitsu''), boiled [pea](/source/pea)s, often ''[gyūhi](/source/gy%C5%ABhi)'' and a variety of [fruit](/source/fruit)s such as [peach](/source/peach) slices, ''[mikan](/source/mikan)'', pieces of [pineapple](/source/pineapple)s, and/or [cherries](/source/Cherry). The anmitsu usually comes with a small pot of sweet black syrup, or ''mitsu'' (the ''mitsu'' part of ''anmitsu''), which one pours onto the jelly before eating. Anmitsu is usually eaten with a spoon and fork.

A few variations on this dessert do exist. [Mitsumame](/source/Mitsumame) is anmitsu without bean paste, the ''mame'' meaning the peas that are served with the syrup and agar jelly instead. Cream anmitsu is anmitsu with [ice cream](/source/ice_cream) on top. [Shiratama dango](/source/dango) are also commonly used as toppings.
