***Ankimo*** (鮟肝) is a [Japanese](/source/Cuisine_of_Japan) dish made with [monkfish](/source/Monkfish) liver.

The liver is first rubbed with salt, then rinsed with [sake](/source/Sake). Any veins are removed, and then the liver is rolled into a cylinder, and cooked by [steaming](/source/Steaming). *Ankimo* is often served with *momiji-oroshi* ([chili](/source/Chili_pepper)-tinted grated [daikon](/source/Daikon)), thinly sliced [scallions](/source/Scallion) and [ponzu](/source/Ponzu) sauce.[1]

*Ankimo* is considered one of the *[chinmi](/source/Chinmi)* (delicacies) of Japan. It is listed at number 32 on *The World's 50 Best Foods* compiled by *[CNN Go](/source/CNN_International)*.[2]

## Preparations

Ankimo is most often consumed outside of Japan as [sushi](/source/Sushi) or [sashimi](/source/Sashimi). Inside Japan, ankimo is used in several [meibutsu](/source/Meibutsu), regional delicacies, such as [dobu-jiru](https://en.wikipedia.org/w/index.php?title=Dobu-jiru&action=edit&redlink=1), stewed ankimo and vegetables from [Fukushima](/source/Fukushima_Prefecture).[3]
